Egg Drop Soup

Ingredients
3 c Chicken broth
1 med Green onion with top
1 tsp Salt
Dash of white pepper
2 Egg slightly beaten

Steps
Heat chicken broth, salt and white pepper to boiling in 2 quart saucepan.
Stir green onions into eggs.
Pour Egg mixture slowly into boiling broth, stirring constantly with fork to form shreds of Egg.

Egg Flower Soup

Servings
4 Persons

Ingredients
46 oz of clear chicken broth.
1/4 Cup of fresh chopped green onions.
1 tbsp of cornstarch diluted in 2/3 cup of cold water.
4 Eggs (large) (lightly scrambled)
1 Cup of firm Tofu cut into 3/4 in. cubes.
1/2 Cup of thinly sliced bamboo shoots.
1/4 Cup of thinly sliced common mushrooms.
1/4 Cup or just a little less of frozen, sweet green peas.
2 Tbl.sp. of soy sauce.
1/2 Tsp. of sesame oil.

Steps
Bring broth to a simmer.
Add peas,bamboo shoots,mushrooms, and green onions to the simmering broth.
Allow vegetables to cook for approx. 5 min. While gently stirring the mixture, slowly add the eggs.
Stir for a minute, and then add the tofu, soy sauce, sesame oil and cornstarch.
Cover and allow to simmer for 7-10 minutes.

Egg Rolls

Ingredients
1 lb. chinese cabbage (Napa)
2 stalks celery
1/2 lb. cooked shrimp
1/2 lb. cooked pork, chicken livers or chicken (finely chopped)
10 water chestnuts
1/3 c bamboo shoots
1 tsp. salt
1 tsp. sugar
Liberal dash pepper
1/2 tsp. light soy sauce
1/4 tsp. sesame oil
1 beaten egg
10 egg roll skins
3 cups oil

Steps
Boil cabbage and celery until very tender.
Drain and squeeze out excess water.
Shred very fine and set aside to drain further.
Par-boil shrimp and fry or bake pork.
Mince both.
Shred water chestnuts and bamboo shoots.
Mix all ingredients but egg together.
Beat egg.
Wrap filling in egg roll skins and seal with egg.
Heat oil in wok or deep fat fryer to 375 degrees and drop in egg rolls.
When skin turns light golden brown, remove from oil and drain (refrigerate them and finish the cooking process when needed).
When cool, drop again into hot oil and fry until golden brown.

Bacon & Egg Salad

Carbs Per Serving : 23g total

Ingredients
8 eggs
1 cup mayonnaise
½ pound bacon
1 cup hot pepper cheese
3 tablespoons chives
4 thin radishes, sliced thin
1 head lettuce, torn fine for salad
1 avocado, cubed

Steps
Boil the eggs, until hard and dice them.
Fry the bacon and crumble it.
Mix all ingredients in a bowl.

NOTES:
Carbs for avocado based on 14.85 for 1 3/8 cup – adjust accordingly.
Carbs for lettuce base on 2 for 1 cup – adjust accordingly.
Carbs for hot pepper cheese not included in above total – adjust accordingly.
